Have you ever thought ‘it’d be nice to make gourmet chocolate truffles myself’ but were intimidated by the level of skill that goes into them? Well I sure have! Before I went to pastry school, my attempts at making truffles ended mostly in a goopy mess. A delicious mess, no doubt, but a disaster nonetheless. There’s a reason why chocolatiers take years to perfect their craft and why handmade truffles cost a bomb. Well, not to worry cos here’s my “cheat” version which is inexpensive and so simple, you can even get your child to help you out.

Only four ingredients are required for the truffle but the key to success lies in the temperature of the ingredients. Do make sure that the butter and cream cheese are taken out of the fridge ahead of time to soften (but not melt!) before putting them all into the blender. And when melting the white chocolate for the coating, remember to use a dry, clean bowl because even the tiniest drop of water can cause chocolate to seize! Oreo Cheesecake Truffles

1 pack (130g) Oreo cookies
130g cream cheese, soft
30g unsalted butter, soft
200g white chocolate
50g dark chocolate (for decorating)

1. Place Oreo cookies in food processor and process until they turn into fine crumbs. Set aside a tablespoon of Oreo crumbs for decorations later.
2. Add softened cream cheese and butter into the food processor with Oreo crumbs. Blend until everything is well combined.
3. Scoop teaspoons of dough out and roll into balls. Place them in the freezer to harden for 20-30 minutes.
4. Melt white chocolate in a bowl over a simmering bain marie (hot water bath).
5. Dip frozen dough balls into melted white chocolate to coat. Tap excess chocolate off the truffle and let it set on a plate or parchment paper.
6. Decorate by piping melted dark chocolate over and topping them with reserved Oreo crumbs. Refrigerate until ready to eat.
